Apples galoreThe Apple Source Book by Sue Clifford and Angela King with Philippa Davenport (for Common Ground) is a must on the kitchen shelf of anyone who appreciates the diversity of our favourite fruit.
Sub-titled Particular uses for diverse apples, it draws on the observations and recipes of many different contributors, including the WI's own Grace Mulligan, and includes a useful index giving details of specialist nurseries and orchards throughout the UK.
The list of chefs, food writers and gardeners contributing recipes and anecdotes is long - from Raymond Blanc to Delia Smith and Sophie Grigson - and these are complemented by a wealth of useful information about apple identification, wildlife, cider making, history and much more.
The book celebrates the nearly 3,000 varieties we can grow in Britain and urges us to conserve them for future generations. Published by Hodder & Stoughton, £16.99.
