Image This paté is delicious as a starter or light lunch. Serve with slices of wholemeal toast or warm wholemeal rolls and a salad garnish. The warm peppery flavour of rocket leaves complements the richness of the smoked mackerel perfectly.

Preparation time: 15 minutes plus 1 hour chilling

50g pack of rocket leaves
225g/8oz smoked mackerel fillets,
skinned and flaked
250g tub of Quark
1 teaspoon horseradish sauce
squeeze of fresh lemon juice
freshly ground black pepper

Put the rocket leaves, smoked mackerel, Quark and horseradish sauce into a food processor. Give several pulses to purée the ingredients, scraping round the sides of the bowl in between, to create a textured paté.

Check the seasoning and add a generous squeeze of lemon juice and some freshly ground black pepper to taste.

Transfer to four individual ramekin dishes or one large bowl, cover and chill for about 1 hour before serving.
