Sardine Spaghetti Print E-mail

Serves 4

Spaghetti – enough for four people
1 tin of sardine fillets
4–6 tomatoes peeled or from small can
large handful of chives
2 garlic cloves (to taste)
1-2 tablespoons capers (to taste)

Boil enough spaghetti for four people and cook until al dente. While the pasta is cooking, fry the chopped garlic in a pan making sure not to burn it.

Add the tomatoes and capers and cook on a low heat for 5 minutes without stirring. Add the sardines that have been gently broken up (not mashed) and cook for a further minute.

Combine the sauce with the pasta in a large bowl and sprinkle with the chopped chives.
