Roasted Garlic Print E-mail

Roasted garlic is delicious mashed and spread on bread, and it's also an ingredient in many other garlic recipes.

3 heads of fresh garlic
3 tbsp extra virgin olive oil
 
Preheat the oven to 180ºC (350ºF). Slice off the tops of each garlic head, slightly exposing the raw cloves. Remove some of the outer papery skin without exposing the garlic flesh. Place in a small, ovenproof dish. Drizzle each head with 1 tbsp olive oil. Cover tightly with aluminium foil and bake for 1 1/2 hours. Remove and serve with thinly sliced baguette or crackers. (Remove the roasted garlic by gently squeezing each clove.)

Full, roasted heads can also be served as an accompaniment to roast meat or chicken.
