Pesto Garlic Prawns Print E-mail

This is a great dish to cook in the microwave oven. The flavours are fresh and the colours bright. If left to the last minute to cook, these can form part of a fabulous dinner party or a quick, if extravagant, lunch served with lots of fresh crusty bread. Use raw prawns (the larger you can afford, the better) but if you have to use small ones, remember that they need only a quick reheat for 2-3 minutes on MEDIUM. Re-cooking will mean that they toughen and lose all that gorgeous flavour.

2 tbsp prepared pesto sauce
2 tbsp lemon juice
2 cloves garlic, crushed
500g shelled, cleaned, raw king prawns (approx 750g prawns in the shell)
basil leaves for garnish

Place the butter in a large, shallow ovenproof dish or casserole. Melt on HIGH for 30 seconds, stir in the pesto sauce, lemon juice and garlic. Gently add the prawns and toss to coat with butter.
Cover the dish with a well-fitting lid and cook on MEDIUM for 6-8 minutes, giving the dish a good shake or stir half way through cooking time.
The prawns are cooked when they are pink, opaque, and solid throughout when pierced with a sharp knife. Check if they are cooked after the minimum cooking time as they become really tough if overcooked. Serve immediately, garnished with basil leaves.
