| New potato cakes with smoked salmon |

Preparation time: 10 minutes
Cooking time: 20 minutes 350g (12oz) British new potatoes, scrubbed and halved 1 tbsp olive oil 3 tbsp half-fat crème fraiche 2 tbsp freshly chopped chives Zest of 1⁄2 lemon 1 tbsp capers Salt and pepper 100g (4oz) Scottish smoked salmon A few chives for garnish Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender, then drain and return to the pan. Using a potato masher, lightly crush the potatoes with the olive oil, 1 tbsp crème fraiche, 1 tbsp chives, lemon zest and capers and season to taste. Divide the potato between two plates and top with the smoked salmon. Spoon the remaining crème fraiche on top and garnish with a few extra chives. Serves 2 |
