Chicken and Broccoli Bake Print E-mail

butter, for greasing

50g (2oz) broccoli, purple sprouting broccoli or asparagus in season

100g (4oz) cooked chicken, skinned and cut into pieces

1 tbsp crème fraîche

1 tbsp mayonnaise salt and freshly ground black pepper

1 tbsp grated Parmesan cheese

1 tbsp grated strong Cheddar cheese

sprinkling of breadcrumbs, optional

1. Preheat the oven to 190ºC/375ºF/ Gas Mark 5.

2. Butter an ovenproof dish.

3. Cook the broccoli in a pan of boiling water until it still has a bit of a bite. Drain and set aside.

4. Put the chicken into the dish and lay the broccoli on top.

5. Mix together the crème fraîche and mayonnaise, and season with salt and pepper.

6. Spoon this over the chicken, then top with the Parmesan, Cheddar and breadcrumbs, if using.

7. Bake in the oven for 20 minutes or until it is hot and golden.
