butter, for greasing

1 banana, peeled and sliced in half lengthways

1½ tbsp brown sugar z

est and juice of 1 lemon

1 tbsp Malibu liqueur double cream, to serve

1. Preheat the oven to 200ºC/400ºF/Gas Mark 6.

2. Butter a shallow ovenproof dish.

3. Place the banana in the dish and sprinkle over the sugar, a scraping of lemon zest, a squeeze of lemon juice and 1½ tbsp water.

4. Bake in the oven for 6–7 minutes, then pour over the Malibu and continue baking for another 15 minutes or until the banana is brown and the juice is syrupy.

5. Serve with double cream.
