Baked Apples with Micemeat Stuffing Print E-mail

Popular with children and adults alike, these baked apples are an easy and healthy pudding. Have a small bowl of mincemeat on the table so everyone can spoon on a little extra.

6 tbsp mincemeat plus extra for serving
1 tbsp dark rum or cider
 
Preheat the oven to 200ºC (400ºF/Gas Mark 6). Wash the apples and core them. Sit the apples in a shallow baking dish and fill the holes left by the cores with mincemeat. Stab each apple with a knife blade in about 4 places around its fattest part to let the juice exude while cooking. Pour half a cup of water into the dish and add the rum. Cover the apples loosely with foil and bake for 25-35 minutes, depending on size, or until the apples are tender. Serve hot with extra mincemeat for topping, if you like, and with custard or ice-cream - maybe the mincemeat ice cream below.
